Our process marries generations of winemaking tradition with modern precision to gently remove the alcohol while protecting the flavor, texture, and soul of the wine.
Crafting the Wine
Our process begins like any fine wine: with intention, patience, and respect for the fruit.
For our Cabernet Sauvignon, the grapes are gently destemmed before undergoing a technique called flash détente. The grapes are softly warmed and then rapidly cooled - a process that unlocks deep color and rich, natural flavor without additives. Think of it as the difference between a softly steeped tea and one that’s brewed to perfection: fuller, bolder, and bursting with character.
Our Chardonnay begins its journey with a careful pressing. The juice is fermented in stainless steel tanks, then aged slowly with French and American oak, which adds texture, warmth, and a golden hue. The result is a wine that’s elegant and expressive even before the final transformation.
The Spinning Cone: A Graceful Dance of Science and Flavor
Once our wines reach full maturity, they embark on a delicate step that transforms them into their non-alcoholic form — a process called spinning cone technology.
Imagine the swing ride at a fair: as the ride begins to spin, the chairs lift outward, each one gently suspended by the balance of motion and gravity. Inside our spinning cone column, the wine takes a similar ride. The wine is carefully rotated at controlled speeds, and through centrifugal force, the lighter alcohol naturally separates from the heavier flavor and aroma compounds that give wine its soul.
No chemicals, no shortcuts - just motion, temperature, and precision. The process happens at low temperatures to preserve the integrity of the wine, ensuring every nuance of aroma and texture remains intact. When the ride ends, what remains is the essence of the original wine - beautifully aromatic, richly layered, and entirely free of alcohol.
Restoring the Soul of the Wine
Once the alcohol is gently lifted away, our focus turns to rebuilding the wine’s depth and balance. Using natural grape skin extracts, we restore texture and mouthfeel, while oak infusions - made by soaking and dehydrating French and American oak to create a “tea” - bring back the subtle warmth and complexity that define a fine wine.
It’s a final act of craftsmanship - ensuring that what’s poured into your glass tastes just as it should: rich, expressive, and true to the vine.
